This salad was so good. Perfect for a rainy autumn evening. 1 large head of lettuce, handful of baby kale (“red russian” variety is my fave), a few big yellow and pink swiss chard leaves, handful cilantro, 1/2 avocado, 1 medium zucchini, bunch of tomatoes (various types), 2 figs, lots of pomegranate seeds, lots of scallions, & 1.5 cups warm quinoa (I used red & white). Decorated with some edible flowers, nasturtiums and calendula petals, and then dressed with a simple tahini dressing: 1.5 tbsp tahini, 1/2 lemon juiced, 2-3 tbsp water mixed together with a spoon. 🍁 Happy thanksgiving to all my fellow Canadians!
